I think it's 備. You can find this symbol very often in the beginning of the signature because it's the first character in the name of 3 provinces:
備後 - Bingo
備中 - Bitchū
備前 - Bizen
The blade is ō-suriage (greatly shortened), I'd say it was made in mid-Muromachi.
